The Castile or Caupí bean is a legume that originates from Central Africa and is consumed all over the world. In Peru, its cultivated mainly in the northern regions. Even though the Castile bean is produced in many countries, the Peruvian grain is recognized for its high quality, high protein value and also as an aid to counter high cholesterol, diabetes and anemia.
